Shakshuka With Chilli Jam Recipe - Myanbah Farm

Ingredients

Shakshuka with Chilli Jam
  • 2 Tbsp olive oil
  • 1 Small finely chopped red onion
  • 1 Small finely chopped red capsicum
  • 1 Can of chopped Roma tomatoes
  • 50 gms of halved cherry tomatoes
  • 2 Eggs
  • 1 Tsp of hot paprika
  • 2 Tbsp of chilli jam from @myanbahfarm
  • Salt as per taste
  • Cracked black pepper as per taste to serve
  • Handful of crushed goat cheese
  • Fresh Basil leaves
  • Sour bread slices toasted and buttered

Method

  1. In a small pan or skillet, heat oil on a medium heat and add onions to fry, once onions are crispy red capsicum, cherry tomatoes, Roma tomatoes, spices, chilli jam , salt and pepper. Mix well and let it cook for about 15 mins until gravy thickens and stir occasionally
  2. Create 2 indents using a soup spoon and crack 2 eggs in these indents. Cover with lid and lower the heat. Cook for another 5-7 minutes until egg white is all cooked.
  3. Once egg whites are cooked remove skillet from heat , let it rest for about 5 minutes uncovered, add goat cheese and basil leaves to garnish. Serve immediately with sour bread slices. Enjoy!
